One-Pan Gnocchi

Do you ever stand in front of your refrigerator and wonder "what do I cook tonight?"


Well, here is a dish that is guaranteed to be delicious and it is perfect for a fall or winter night. This is a huge hit in our home! I have shared this recipe with family and friends too, and they tell me they make it often!


So let's dive in.


Ingredients

1 green pepper, sliced

1 yellow pepper, sliced

1 orange pepper, sliced

1 red onion, sliced and quartered

6 cloves garlic, peeled and smashed

20 cherry tomatoes

1 package of Field Roast Italian Sausage (4 sausages, sliced)

Olive Oil [for veggies and for gnocchi]

Italian herbs (oregano, garlic powder, basil, crushed red pepper) [1-1.5 tsp each]

Salt and Pepper [good pinch of salt and 1/2-1 tsp freshly cracked pepper]

Cauliflower Gnocchi [cooked to package directions]

Vegan parmesan [1/2 cup]


Method

Add veggies and sausage to sheet pan.

Drizzle olive oil on top and add herbs, salt, and pepper.

Toss it all together and bake at 425* for 20-25 minutes


While your veggies and sausage are baking, cook gnocchi according to package directions.

When it is done, add to a bowl drizzle olive oil on top and add a generous amount of vegan parmesan.

Toss it all together and set aside.


Once the veggies/sausage are done, add the gnocchi on top of the veggies/sausage and back into the oven on broil for 4-6 minutes (depending on your oven and be careful it doesn’t burn!)


Remove from oven, load up a dish and enjoy with some fresh homemade bread or your favorite loaf!

Other options:

Try adding other veggies to the mix too - like eggplant, zucchini, summer squash, brussel sprouts, or other veggies you may like or have on hand.
