How to Make a Quick and Budget-Friendly Tofu and Veggie Pesto Bowl

Are you looking for a super fast, inexpensive, delicious meal? Well, look no further - this takes roughly 20 minutes to make and costs roughly $5 per serving! Tofu is all about how you cook it and tossing it with pesto is a great way to add a lot of flavor! So let's dive in shall we?


Serves 4


Ingredients

  • 14 oz super firm tofu (drained and chopped into cubes)

  • 15 oz can of cannellini beans (drained and rinsed)

  • 1 small head of broccoli (trimmed and chop stalk)

  • 1 leek (sliced into half moons and rinsed)

  • 3 cups of spinach

  • 1/2 cup of veg stock

  • 6.5 oz container of vegan pesto sauce

  • salt and pepper to taste

  • 1 cup of jasmine rice (cooked to package directions)


Method

  1. Start your rice.

  2. Heat sauté pan on medium heat. When hote, add EVOO.

  3. Add the tofu to pan and cook for about 5 minutes, making sure to toss or flip to lightly brown all sides.

  4. Next add leeks to pan with a pinch of salt. Cook for 3 minutes.

  5. Now add the broccoli, beans, and veg stock. Stir and cover and cook for 5-8 minutes.

  6. Uncover and add the spinach and pesto. Stir to combine and allow the spinach to wilt. Taste and add salt and pepper to your liking.

  7. Serve on top of jasmine rice (or pasta!)

  8. Enjoy!
